Opa's started in 1947 as a meat locker and market on South Washington Street in Fredericksburg, Texas. We're still on the same street, and the same family still runs it.
The locker on Washington Street
Before there was a sausage line or a deli, there was Fredericksburg Lockers: a place in a Texas-German town to process meat, store it, and buy it fresh across the raw-meat counter. The name is still on our paperwork. The original walk-in cooler and freezer doors are still in daily use.
The smokehouse, and a counter to sell it
The smoke came in the 1970s. The family started smoking sausage and opened the Deli & Market to sell it. The Country Blend, beef and pork, came from that start. It's still the original family recipe, and the base the newer flavors build on. Everything we make is still made here, in small batches.
Three generations in
Opa is German for grandfather, and the name fits: the business has passed through three generations of the same family. The lineup grew. Jalapeño Cheddar became the one everyone asks for, and Hatch Green Chile and Habanero joined the case. The way it's made didn't change.
The hours on the door haven't changed either: Monday through Friday, 8 to 5:30, and Saturday, 8 to 4.
Where you'll find us today
Today Opa's is in select grocery stores across Texas, the South and Southwest: H-E-B and Central Market, Walmart Supercenters, select Sam's Clubs, Albertsons and Albertsons Market, Randalls, Tom Thumb, United Supermarkets, Market Street, Amigos, Brookshire's, Lowe's Market, Food King Cost Plus, Vista Supermarkets, Food City, and independent grocers through Affiliated Foods. It ships cold anywhere in the U.S., turns up on restaurant and winery menus around the Hill Country, and still has a counter of its own on Washington Street.
What hasn't changed
In every smoked link:
- A coarse grind
- Premium ingredients
- Small batches
- Craft made
The best way to know us is still the tasting station, four sausages on the griddle any day we're open. Or start with a box that ships.
